The terms "cling" and "freestone" refer to the adherence of the peach flesh to the pit (stone). Cling peaches have a tight adherence to the pit and freestone peaches have little or no adherence of the flesh to the pit. There are also peach varieties that are semi-cling or semi-freestone, where there is some adherence of the flesh to the pit.
