With proper care, potatoes can be stored for four to six months. The most important factor is storage temperature, with 40o F being ideal. Sprouting in storage is a serious problem at high temperatures. Other important factors include keeping the potatoes in the dark to prevent greening, maintenance of high humidity (80% to 90%), proper ventilation, and having tubers which are free of disease when placed in storage. Clean your storage room thoroughly before storing potatoes.
