My entire yard is bordered with pine trees. What can I plant around these trees (flowers and shrubs) that will not be killed off by pine needles?

Actually, nothing that you plant will be killed by the pine needles. However, anything you plant under the pine trees will be competing with the trees for light, water, and nutrients and will eventually lose to the trees. You will have to provide additional water and nutrients, and you should choose plants that are tolerant of shade, drought, and poor soil.
