I am in the fifth grade and need information for a science project about the effects of different containers on milk and its properties. Can you help me find information?

Light can destroy or lower milk quality. Milk quality is altered through oxidative degradation of milk proteins and lipids which end in the development of off-flavors. Thus, cardboard cartons and colored glass bottles and containers are better. Some stores have specialized lighting in front of the milk area to remove/block fluorescent lighting. You will need to contact a university with dairy manufacturing specialists for more information (for example, the University of Wisconsin at http://foodsci.wisc.edu/ or South Dakota State University at http://www3.sdstate.edu/Academics/CollegeOfAgricultureAndBiologicalSciences/DairyScience/).
