I would like to pick some blooms on my Annabelle Hydrangea for a bouquet. Will this affect the size and shape of my shrub next year?

Annabelle hydrangeas bloom on the new (current growing season) wood and not the older wood that goes through the winter. Harvesting some flower cutting during the growing season will have no impact on the plant for next season.
