There are two common methods of pasteurization: batch pasteurization and flash pasteurization. Batch pasteurizing is the process of heating milk to 145ºF for 30 minutes, while flash pasteurization, also called high-temperature short-time (HTST) pasteurization, is carried out at 161ºF for 15 seconds.
The newest method developed for pasteurization is Ultra High Temperature (UHT) pasteurization. UHT heats the milk to 250ºF under pressure for one to two seconds. Each of these methods is proven to be an effective method to kill bacteria that might be present in raw milk.
