How do I determine when my spaghetti squash are ready to be picked, and will they continue to ripen once picked?

Spaghetti squash should be allowed to mature on the vine. Pick squashes when:
a. Fruit skin resists puncturing with fingernail and
b. Fruit skin turns from whitish to yellowish.

Cut mature spaghetti squashes with 1 to 2 inches of stem attached. You can store them at 55 degrees F for later use, but don't allow them to touch each other in storage.

No, they do not continue to ripen in storage.
