If you have a horse farm and you provide lessons and boarding and you sell horses, do you have to collect sales tax on the sale of horses or the other services you provide?

Collection of sales tax depends on the state you live in. We would suggest contacting your state's Department of Agriculture, who can let you know if you have to collect sales tax on the sale of horses. In Kentucky, for example, you have to collect sales tax on the sale of all horses. In most states, you don't have to collect sales tax on services provided.
