I have a older horse that kicks the fence when I feed him.

This may not be a satisfactory answer to your question, because some habits horses develop are hard to explain. Some horses fed in stalls develop a habit of kicking. It may be that the horse has been a dominant horse with other horses and has developed the habit of protecting his territory (his feed) while eating. Especially since he is older, he may be eating more slowly and does not want to have his feed taken away by another horse or human.
