Quality Grades

Quality Grades- Are used to measure the consumer palatability characteristics based on yield grades measuring amount of fat, lean, and lone in the carcass. When grading carcasses, there are eight possible quality grades and five yield grades they could receive.

  • Choice
  • Good
  • Standard
  • Commercial
  • Utility
  • Cutter
  • Canner

  • Yield Grade 1
  • Yield Grade 2
