Protein- a substance made up of amino acids that contains approximately 16% nitrogen (based on molecular weight). Proteins are complex compounds made up of hydrogen, carbon, oxygen and nitrogen. Proteins serve a variety of functions in the body including structural components of hair, feathers, skin, tendons, and ligaments. Contractile proteins, actin and myosin, regulate muscle action. Proteins also function as hormones, enzymes, and carriers in the body.
