The Niche Meat Processor Assistance Network is a national network of people and organizations assisting niche meat processors and the livestock producers and niche meat buyers who depend on them.

Niche meat – what is that? Arion Thiboumery of eXtension’s small meat processors community of practice, says it’s market differentiation. Niche meat processors are small to mid-sized meat processing facilities that can serve local and regional markets for meats such as local, grass-fed and organic.
