SPRINGFIELD, Mo. -- Dieters can decrease the calories and fat in casseroles and other favorite dishes by making their own substitutes for some high fat foods.

Tammy Roberts, a nutrition and health education specialist with University of Missouri Extension, offers three recipes for making substitutes.
