Grilled Vegetables

Grilled Vegetables
Assorted vegetables (green, yellow, red peppers – cut in large strips/ zucchini – cut in large diagonal slices / mini carrots – cut in half / onions – cut in wedges / broccoli – broken into small stalks/ others

Toss with 3 or 4 tablespoons of olive oil and 2 tablespoons of chopped fresh rosemary and ½ teaspoon of salt in a large Ziploc bag.

Spread onto a large cookie sheet. Bake in hot oven 425 degrees for 25 minutes or until tender. OR Spread in wire basket on the grill – grill for about 10 minutes stirring half way through.
