Fatty Acids

Fatty Acids - An acid made up of a long chain of hydrocarbons created by the breakdown of fat via hydrolysis. They can be saturated (no double bonds in the chain), monounsaturated (one double bond in the chain) or unsaturated (one or more double bonds in the chain). Examples of fatty acids found in foods include linoleic acid (18:2n-6), arachadonic acid (20:4n-6), and alpha-linolenic acid (18-3n-3). They can also be categorized as omega-3 and omega-6 fatty acids based on the position of the last double bond in the chain.
