How and when should I harvest cucumbers?

Cucumber fruits may be harvested at 1 1/2 to 2 inches long and just before they begin to turn yellow. For any one fruit, this period may be up to 15 days, depending on the temperature. The harvesting period for all fruits lasts for about six to eight weeks. It is important to remove fruits before they turn yellow so plants continue to produce. If fruits are picked early, plants can bear 35 to 50 cucumbers, but if fruits are picked at a large size, only five to 12 cucumbers will form. Old cucumbers prevent plant food from going into the production of new fruit.
