Why can't I get greens (lettuce, spinach, mustard) to grow in the middle of the summer?

Greens are mainly cool-season vegetables. The summer heat causes most greens to bolt (to flower and go to seed), and their flavor is often strong or bitter during the summer months. Insect feeding pressure may also destroy greens in the summer. Swiss chard is a popular leafy green for summer production. The variety 'Bright Lights' has colorful stalks and leaves and is often used as both a vegetable and an ornamental.
