According to research, if no more than 24 hours have passed since processing, the food can be saved. You can either reprocess and refrigerate the food and use it within a few days, or you can freeze it. Freezing and reprocessing will result in a product that is softer in texture and lower in nutritional value.

If reprocessing the food, remove the lid and check the jar sealing surface for nicks and cracks. If you find a nick or crack, place the food in a new jar. Always reprocess with a new treated lid. Bands should be replaced if they are bent. Process for the full time specified by the directions.

Remember: If food is not sealed, it must be discarded after 24 hours if neither frozen nor processed.
