Why do beet roots fail to enlarge, and often become woody?

For beet roots to enlarge and be of high quality they need loose, cool, moderately fertile soil, small amount of boron, regular water and proper plant spacing (2-4 inches apart). Thinning is import to maintain rapid growth; lack of moisture and fertilizer will result in slow growing, woody roots.
