What causes radish roots to crack?

Cracking is caused by fluctuations in soil moisture, which cause the root to swell rapidly and crack, especially near maturity. Radishes should be harvested routinely to avoid cracking. The key to split-free radishes is regular, evenly supplied water. Soils that swing quickly from wet to dry to wet encourage splitting.
