What causes my turnip greens to have a bitter and pungent flavor?

Conditions that result in slow growth or stress of the turnip plant will often cause the leaves to have a bitter, off-flavor. These conditions are prevalent when turnip leaves mature under high temperatures combined with unfavorable growing conditions.  Root crops grown for their greens perform best in the spring and fall when temperatures are cool and moisture is abundant.
