I have what I call doodlebugs. They are gray, armor-plated insects that, when threatened, roll into a ball. They hide under the mulch and eat my young plants. Do you have any nonchemical control suggestions?

You are describing insects called pill bugs, roly-pollies, sowbugs, and, yes, maybe even doodlebugs. They are night feeders that feed on organic matter. They usually do not damage plants unless plants are young, tender, and close to the ground.
Garden centers sell pill bug bait (containing insecticide) that attracts the bugs and, when consumed, kills them. Some people put large lids or boards in the garden area and pour hot water on the pill bugs after they have congregated. The more organic matter you have, the more of the bugs you will have.
