Why did the strawberry leaves in our school garden turn red during late December, early January?

The strawberries have responded to the cooler temperatures. As temperatures cool down, the green color in the leaves, or chlorophyll, is not made as readily as the red colors, or anthocyanins. Anthocyanins, which are usually masked by chlorophyll, are expressed during cold weather. The plants should green back up as the temperatures warm up in the spring.
