It okay to eat the yellow fruit on my Ichiban eggplants? The fruit set low on the plant, grew large and stayed yellow.

It is likely you left the eggplants on the plant too long. While there will be nothing toxic about the fruit, it will probably be very bitter and have mature seeds inside. Cut the fruit off and relegate it to your compost pile.  It always a good idea to read about the vegetable crops and varieties you select for your garden so that you will know when they are ready to pick.
