When do I harvest the roots of my Jerusalem artichokes? If I miss any, will they regenerate from the roots?

It takes Jerusalem artichokes (Helianthus tuberosus L.) 120 to 130 days after planting to be ready for harvest. Or you can leave them until the tops are killed by frost and dig them up after that. And yes, any tubers left in the ground will overwinter and sprout next spring.
