You should not cut back your asparagus until after a killing frost. The asparagus plant is using the green material to photosynthesize and store energy for the plant. Cut the foliage back any time after a killing frost or before new growth begins in late winter. In areas where winter protection is needed, leave the ferns up over the winter to catch snow and help protect the plant crown. Remove the debris in the early spring.
