I already have established bermuda grass for horse pasture. What do you recommend for native cool-weather grass in the same pasture, and when would you sow seed for it? Maybe perennial ryegrass? And for summer, maybe orchard grass to mix in with the bermuda grass?

Annual ryegrass is a good forage suited to the South. It is easily established and has good forage yield in late winter and spring. It is a better alternative than perennial ryegrass; however, it must be reseeded each year. Orchard grass is not a good option to mix with bermuda grass pasture, as it not as well suited to your area. Another alternative would be a clover (white or crimson) or a lespedeza. As far as planting dates, your local or district extension agricultural agent can provide specific planting dates for your area. Your agent also may have alternative forages well suited to where you live.
