How is milk classified?

Milk is classified by product type. There are four classes of dairy products:

Class I - Beverage milks

Class II - Fluid cream products, yogurts, perishable manufactured products (ice cream, cottage cheese, and others)

Class III - Cream cheese, hard manufactured cheese

Class IV – Butter, milk in dried form
