We have several 60 foot wild black cherry trees over hanging a newly constructed patio. We had an abundance of cherries falling this year that required daily removal. Do wild black cherry trees drop cherries every year? Can they be prevented from producing fruit?

Yes, they will drop fruit every year unless a frost kills the blossoms or birds eat the cherries first. The best option is to replace the cherries with a nonfruiting, smaller patio tree.
