I'm using Hi-Dep, a broadleaf herbicide, to spray thistle and other weeds. Do I need to remove the cows we eat for a time period?

Hi-Dep is a formulation of the commonly used broadleaf herbicide 2,4-D. The only grazing restrictions would be to not allow dairy cows or meat animals that are being finished on pasture to graze treated pasture within two weeks after application. It will not be a problem for beef cows.
