The most important clue to an apple's maturity is the change in background skin color. When it changes from leaf green to a yellow-green, the apple should be ready to pick. The seeds will be brown when the apples are ready for harvest, but they often turn brown before the fruit is actually mature. Leave the stems on apples that will be stored; this improves their longevity.
