How do I ripen green tomatoes?

Tomatoes at the "breaker" stage and beyond will continue to ripen and gain flavor. A tomato at this stage shows a definite change ("break") in color from green to a tan-yellow, pink, or red on 10 percent or less of the tomato surface. These tomatoes can be picked, wrapped in newspaper, or placed between sheets of newspaper and set in a dark area where temperatures are 55° to 70°F. Check regularly for ripened tomatoes and plan to eat them soon, as they lose eating quality quickly after they ripen.
