Do green tomatoes contain lycopene?

Last Updated: June 24, 2010

The pigment that gives red tomatoes their color is called lycopene. There are some apparent health benefits associated with a diet high in tomatoes and tomato sauces, attributable to the lycopene. Tomatoes that ripen on the vine develop higher levels of lycopene than tomatoes picked green that later develop a red color. Yellow tomatoes and green tomatoes lack lycopene.
