If you are processing less than 1,000 birds per calendar year, not necessarily. In some states the facility may require a state license. Check with your state meat inspection program or state department of agriculture. A small farm with its own licensed, exempt poultry processing facility (mobile or not) could operate under a 20,000-bird exemption. When a mobile poultry processing unit is used by multiple producers, each producer typically must operate under the 1,000 bird exemption.
