How much hamburger should I get from one beef animal?

If you really liked hamburger, you could have the whole thing ground. But what you probably want to know is what's the minimum amount of ground beef you'll end up with (as opposed to steaks and roasts). This will depend on several factors such as live animal weight, degree of fat cover, animal breed, and how lean you want your ground beef to be. This last factor can have a huge impact: for example, you could end up with 20 more pounds of ground beef if you ask for 70% lean ground beef than if you ask for 92% lean ground beef. A general guide would be that from a 1100 lb. live animal you will have 80-100 lbs. of 85% lean ground beef.
