There are several ways to modify a recipe for better health. Some recipes may be altered by simply reducing an ingredient or substituting one for another. Keep in mind that substitution of ingredients may result in changes in the flavor, texture, and/or other characteristics of the finished product. A publication that you might find helpful from Purdue Cooperative Extension is "Altering Recipes for Better Health." The publication may be found at: http://www.ces.purdue.edu/extmedia/CFS/CFS-157-W.pdf.
