There seems to be a lot of different definitions of “organic” food and farming. Can you clarify what is "organic" and "organic production" and who may use them?

Yes. The U.S. government has established legal definitions for "organic" and "organic production" through the National Organic Program. "Organic” is defined as “a labeling term that refers to an agricultural product produced in accordance with the Act and the regulations in this part.”
"Organic production” is defined in the NOP regulation as “a production system that is managed in accordance with the Act and regulations in this part to respond to site-specific conditions by integrating cultural, biological, and mechanical practices that foster cycling of resources, promote ecological balance, and conserve biodiversity.”

Any production or handling operation certified by an accredited certifying agent may use the term "organic." Production or handling operations that are exempt or excluded from certification requirements may also use the term "organic" in certain circumstances.
