Would it help cool down the house to do dishes and laundry at night?

Doing heat-producing activities during cooler times of the day can help reduce internal heat buildup during the hottest time of the day. That doesn't cool the house per se, but it reduces the peak cooling load (amount of heat that needs to be removed). It might help you avoid exceeding the cooling capacity of your air conditioner and maintain comfort.
