What are PAHs?

Polycyclic aromatic hydrocarbons, or PAHs, are a group of more than 100 chemicals that occur naturally in coal, oil, and tar. PAHs can also be released into the air during the burning of fossil fuels, garbage, or other organic substances such as tobacco or meat on a grill. We are routinely exposed to low levels of PAHs in the environment. Elevated levels of exposure have been linked to eye irritation, nausea, and vomiting. Long-term exposure to high levels of PAHs have been linked to cancer, cataracts, kidney and liver damage, and jaundice. Public health agencies are working to ensure that consumers are not exposed to elevated levels of PAHs in seafood due to the oil spill in the Gulf.
