Yes, the oats will continue to freeze down (die off) and lay flat. There would be a slight risk of some nitrates in the oats because of the dry conditions and more so if some nitrogen fertilizer had been applied. Consider collecting some samples of the oats by clipping some to about an inch or two to ground level and send them in for a nitrate analysis. There should be no problems with the grain sorghum stalks. It is assumed that the freeze killed any "sucker" growth that may have occurred in the sorghum.
