Cool-water species are typically grown in the midwestern and northern U.S., although many of the fingerlings are grown in the southern U.S. Most cool-water species were traditionally cultured for recreational pond stocking, but are part of a growing food fish market. The North Central Regional Aquaculture Center can supply information on many of these species.
