What is the best cold-water species (e.g., trout) to raise?

Trout were the first fish cultured in the U.S., and there is quite a bit of information available for raising trout. Most of the trout in the U.S. are cultured in Idaho in raceways. A large volume of cold water is required for trout culture, often limiting where it can be reared. However, trout have been cultured in indoor recirculating aquaculture systems and over the winter in cages in ponds in the Midwest.
