How do you process aquaculture products?

Processing fish can be done manually or through automation. Often, small producers will choose to process their fish manually. The species, and desires of the market, will determine what form the finished product takes. Typically, species such as trout will be dressed (gutted) or pan-dressed (gutted with the head removed), while species such as catfish will be filleted and/or cut into nuggets. In either case, the required materials are quite simple, including only a cutting board and knives.
