Do you have to be certified to process fish?

Yes. Processing fish, as with any other meat product, must be done in accordance with food safety regulations. Seafood processing for the most part is regulated by the United States Department of Commerce, although, since 2009, catfish processing has been regulated by the United States Department of Agriculture’s Food Safety and Inspection Service (FSIS). Regardless of which agency regulates the processing of your particular product, both have similar standards and goals, namely to ensure that food products entering the marketplace are safe and wholesome.
